Enjoy a Southern tradition in your own kitchen.
Zucchini Bread, also called Christmas Bread, may sound a bit strange, but it's
one of the sweetest Southern treats you'll ever eat. Tastes great when served
with cream cheese. Here's the recipe, straight from Moma's Kitchen ...
Preparation suggestions ... shred plenty of zucchini during the summer harvest, and freeze it for the winter to make traditional "Christmas Bread" (zucchini is expensive when out of season) ... for a tasty variation, add chocolate or peanut butter chips, or substitute chopped pineapple for raisins
You need - 3 cups of shredded zucchini, 4 eggs, 2 cups of sugar, 3 cups of all-purpose flour, 1 cup of cooking oil, 1/2 teaspoon baking powder, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon cinnamom, 1/4 teaspoon cloves, 1 cup chopped nuts, 1 cup raisins (or chopped pineapple)
DIRECTIONS - Heat oven to 350 degrees. Grease and flour two loaf pans ... beat eggs, stir in sugar, cooking oil and shredded zucchini ... mix in flour and spices, and then add nuts and raisins. Bake for one hour. Remove from oven and cool loaves in pan on rack. Serve plain or with butter or cream cheese. Goes great with meals or as a snack.
